These bamboo skewers can be found at every Japanese yakitori bar. Yakitori are skewers of charcoal grilled chicken that are often brushed with a sticky tare sauce – a mixture of mirin, sake, soy sauce and sugar. You can also use them for tonkatsu – panko coated pork – and dango – slightly sweet dumplings made with glutinous rice flour, usually threaded three to a skewer.
