Terre Exotique’s annatto seeds are commonly used as a striking food colouring. Use the bright red seeds to add a deep red hue to rice, noodles or use to make Mexican achiote paste (along with cumin, pepper and garlic) for a vibrant, warming marinade.
To release the seeds’ colour, simply heat them in a pan with some oil then infuse into your recipe. The seeds have a mild flavour, which makes them very adaptable to different recipes.
